Distilled during the winter months of February through April in Scotland, this dram was left to mature for 12 years high-up in their first warehouse. The result is an amazing example of how ex-bourbon casks should be used.
Standing at 46% ABV, expect plenty of vanilla notes coming through the bourbon cask. Fresh fruit explodes on the palate with green apples, pears and some melon, developing into soft peach and a slight tropical note, there’s also a pleasant herbaceous almost earthy note on the mid palate. The oak appears again on the finish, offering vanilla pods, clove, cinnamon and some melted honey.
Daftmill is one of the most anticipated new whiskies in Scotland. A true farmhouse expression, they grow all their own barley on site (they even supply other distilleries) and have a tiny annual capacity.
